Got an empty tummy to fill after school or activities but don’t want to ruin the chances of the evening meal getting eaten? These snacks will help fill the gap. They are fast and simple to create, and will provide a much needed energy boost while still leaving room for dinner.

Ultimate Pizza Toastie

Makes one toastie

Ingredients:

  • 2 slices of ciabatta bread
  • 1⁄2 tomato sliced
  • 6-8 slices of pepperoni salami
  • A handful of basil leaves
  • Pizza base sauce
  • Stracchino cheese (or cheese of choice for melting)
  • Olive oil

Directions:

  • Lightly brush the outside of the bread with olive oil
  • Spread the pizza base generously over both slices of bread
  • Layer the tomato, basil, pepperoni and cheese
  • Pop into the sandwich press and toast until cheese has melted and bread is golden brown
