Got an empty tummy to fill after school or activities but don’t want to ruin the chances of the evening meal getting eaten? These snacks will help fill the gap. They are fast and simple to create, and will provide a much needed energy boost while still leaving room for dinner.

Little Mason Jar Nachos

Makes 1 serve

Ingredients:

  • 2 tablespoons of black beans
  • 2 tablespoons of corn
  • 1⁄4 avocado
  • 4 chopped cherry tomatoes
  • 1 tablespoon of sour cream
  • 1 tablespoon of salsa
  • Sprinkle of grated tasty cheese
  • Snack size pack of corn chips

Directions:

  1. Source a jam size mason jar
  2. Add in the beans, corn, avocado and tomatoes
  3. Top with sour cream, salsa and a sprinkle of grated cheese
  4. Serve with corn chips
