Jam-Centred Smiley Face Cookies

Jam-Centred Cookies

These cookies are not just a delight to look at but are also bursting with the sweet surprise of jam at their centre. Crafted from a simple buttery dough and filled with your choice of jam, they combine the classic comfort of homemade cookies with a playful twist.

The smiley face cut-outs reveal the colourful jam peeking through, making each cookie a tiny piece of art. If the kids are trying their hand at cooking, or you’re looking for an easy treat they’ll love, these treats that are as fun to make as they are to eat.

Ingredients

250g plain flour, plus extra for dusting
125g unsalted butter, softened
125g caster sugar
1 large egg
1 tsp vanilla extract
100g of your favourite jam (strawberry, raspberry, apricot, etc.)
Icing sugar for dusting, or cooking chocolate and 100s & 1000s for decorating.

Method

  • Preheat your oven to 175°C and line two baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter and caster sugar until pale and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually sift in the flour, mixing until a soft dough forms.
  • On a lightly floured surface, knead the dough gently until smooth, then wrap in cling film and chill in the refrigerator for at least 30 minutes.
  • Once chilled, roll out the dough to about ¼ inch thickness and use a round cookie cutter to cut out the cookies. For half of the cookies, use a smaller smiley face or round cutter to remove the centres, creating a window for the jam.
  • Place the whole round of cookies on one of the prepared baking sheets and spoon a small amount of jam into the centre of each.
  • Gently lay the cookies with the centres cut out on top of the jam-covered bases, pressing the edges slightly to seal them together.
  • Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
  • Dust with icing sugar for an extra touch of sweetness. Or you can melt some chocolate, dip the cookies and then double-dip into 100s & 1000s.
